These are miniature versions
of the large full fat English Goat Cheese truckle,
being handmade from pasteurised milk. The curd is molded into
miniature cheese molds to give individual mini hard
goat cheeses. They are made using vegetarian
rennet.
The natural rind mini cheeses
are matured in just the same way as the larger
truckles so that they develop the same flavour
and natural rind.
Suggestions
These cheeses are ideal for the cheese board for
that special occasion, they can be used in cooking
or they make an ideal gift.
Black waxed mini goat cheese – this
is a miniature goat cheese but instead of maturing
it naturally, it is coated in black wax once it has
been taken out of the press. This gives the
cheese a protective coating which slows down the
maturing process.
